It seemed only natural to become a Chef growing up. After many successful years in fine dining, Daniel felt it was important to deepen his knowledge of wine and spirits. He has reached the considerable level of Wine &amp; Spirits Educational Trust certified wine educator as a holder of the globally respected WSET Diploma and is now a student of the Master of Wine program.</image:caption>

And this wine was indeed made with the most compassion and care for our planet by following the rules of French organic farming. The label was designed by Gerry Greene, a Michigan based artist. This crémant was born from the partnership we are proud to have with domaine Joseph Cattin, a family owned winery since 1720. Domaine Cattin has been well established in the heart of the Alsacian vineyard for 11 generations. Today, Anaïs and Jacques Cattin are at the head of this superb estate, totaling 65 hectares (160 acres) of vines in and around the village of Voegtlinshoffen near the famous town of Colmar. In the style of the walled vineyards of the monks of Cluny, the domaine consists of an isolated 6-hectare plot of vines in the Saint-Amour Cru. It overlooks the appellation from the slopes of the Mont-Besset and also includes two plots of vines in the Juliénas Cru on the south face of the Mont-Besset. These cover a surface area of 0.5 ha and have blue stone soils. There is an outcrop of sandstone on the upper part of the domaine, then sandstone scree and finally alluvial deposits. This means that the soils are shallow at the top and deeper and deeper as you move towards the bottom of the domaine. This hillside in the Côte de Besset faces East-North-East allowing for greater sun exposure and cooling influences. The vines are planted to Gamay and are on average 60 years old, although the oldest date back to 1947. The vines are trained in Gobelet style, an age-old practice in the Beaujolais region, but one that does not allow for mechanization. The vines require pruning, their shoots attaching, trimming, hoeing and harvesting - all work is done by hand using ancestral methods at Les Sources d’Agape. The domaine has been undergoing a conversion to organic farming and obtained certification for the 2022 vintage. The AOC “Fiefs Vendéens BREM” is one of the most westerly vineyards in the Loire Valley. Despite a presumably cold location, we find a warm and oceanic microclimate producing Chenin Blanc and many other indigenous grapes. These indigenous grapes include the resurgent Fie Gris once grown in much of the Loire Valley. This AOC currently consists of seven wineries and is truly a hidden gem in France. This oceanic Loire location and it’s microclimate offers these vineyard singularity, minerality,energy and salinity. Brem provides a unique terroir where the vines take root and flourish. The Domaine's team is Christian and Delphine Nobiron who proudly work together all year round, “in the vineyard as in life”. They are now the fourth generation to work this 12 hectares vineyard and seems poised to push the boundaries in terms of sustainable agriculture and quality. The Domaine's team is Christian and Delphine Nobiron who proudly work together all year round, “in the vineyard as in life”. They are now the fourth generation to work this 12 hectares vineyard and seems poised to push the boundaries in terms of sustainable agriculture and quality. TECHNICAL INFORMATION Varietals: Chenin Blanc 90% and Chardonnay 10% 2 acres facing South-West Soil: Shale and quartz Vinification: Cool and slow fermentation using indigenous yeasts Maturation: 6 months on fine lees 12.6 % vol Production: 3,000 bottles TASTING NOTES The wine is gold in color and has an intense nose with many complex aromas. Mandarins, pineapple and mango rub shoulders with more spicy notes. On the palate saline notes from the oceanic terroir amplify the balance of richness, concentration with the soft tropical fruit flavours. The mouthfeel is ample, fleshy and structured with a finish of tropical fruit, salinity and minerality.</image:caption>

These cover a surface area of 0.5 ha and have blue stone soils. There is an outcrop of sandstone on the upper part of the domaine, then sandstone scree and finally alluvial deposits. This means that the soils are shallow at the top and deeper and deeper as you move towards the bottom of the domaine. This hillside in the Côte de Besset faces East-North-East allowing for greater sun exposure and cooling influences. The vines are planted to Gamay and are on average 60 years old, although the oldest date back to 1947. The vines are trained in Gobelet style, an age-old practice in the Beaujolais region, but one that does not allow for mechanization. The vines require pruning, their shoots attaching, trimming, hoeing and harvesting - all work is done by hand using ancestral methods at Les Sources d’Agape. Since then, the estate has grown to 13.5 acres on the AOCs of Saint-Amour, Saint-Véran, Beaujolais Blanc et and Beaujolais Rouge. The entire Domaine is going through organic agriculture conversion while Biodynamic techniques are applied without certification.       <image:caption>Appellation d’origine contrôlée THE DOMAINE &amp; THE STORY The story begins in the cold North West of France near the Atlantic Ocean. The AOC “Fiefs Vendéens BREM” is one of the most westerly vineyards in the Loire Valley. Despite a presumably cold location, we find a warm and oceanic microclimate producing Chenin Blanc and many other indigenous grapes. These indigenous grapes include the resurgent Fie Gris once grown in much of the Loire Valley. This AOC currently consists of seven wineries and is truly a hidden gem in France. This oceanic Loire location and it’s microclimate offers these vineyard singularity, minerality,energy and salinity. Brem provides a unique terroir where the vines take root and flourish. The Domaine's team is Christian and Delphine Nobiron who proudly work together all year round, “in the vineyard as in life”. They are now the fourth generation to work this 12 hectares vineyard and seems poised to push the boundaries in terms of sustainable agriculture and quality. TECHNICAL INFORMATION Varietals: Chenin Blanc 90% and Chardonnay 10% 2 acres facing South-West Soil: Shale and quartz Vinification: Cool and slow fermentation using indigenous yeasts Maturation: 6 months on fine lees 12.6 % vol Production: 3,000 bottles TASTING NOTES The wine is gold in color and has an intense nose with many complex aromas. Mandarins, pineapple and mango rub shoulders with more spicy notes. On the palate saline notes from the oceanic terroir amplify the balance of richness, concentration with the soft tropical fruit flavours. The mouthfeel is ample, fleshy and structured with a finish of tropical fruit, salinity and minerality.</image:caption>
